Raw Vegan Tangerine and Fennel Salad


5-6 tangerines, peeled, seeds removed (I bought seedless ones)

1 bulb of fennel thinly sliced

1 shallot finely chopped

2 tablespoons sherry vinegar (or apple cider vinegar)

1-2 tablespoons olive oil (preferably extra virgin)

salt and pepper to taste

 

Put all ingredients in a large bowl and mix until well coated. Toss gently and serve.
