A bright red elixir packed with antioxidants. The cucmber and mint add a cool flavor.
1/4 cup peeled and chopped cucumber
1/4 cup fresh mint
1/2 cup pomegranate juice
1 cup ice
1 cup sparkling water
2 fresh mint stems, for garnish
2 cucumber slices, for garnish
Place the cucumber and mint in a bar glass and muddle. Add the juice and swirl to mix. Pour into a bar shaker (if you don’t have one use a jar with a tight lid), with the ice, and shake. Strain into 2 glasses. I left the cucumber inside though. Top off the glass with a splash of sparkling water and serve. Garnish with mint and cucumber slice.
It can be kept in the fridge for a day or two, if it lasts that long.
