Peasant’s stew- Easy !!! Vegan for Passover

Tonight’s dinner was a delicious and spicy peasant’s stew. Served with matzo crackers.


1 large onion diced

6 red potatoes skin on (cook them before adding to the stew)

1 green bell pepper

5-6 mushrooms

10-15 string beans cut in thirds

2 cans diced tomatoes

parsley to add at the end

salt, pepper, dash of cumin, sage, turmeric, paprika

red pepper flakes (optional, if someone wants to give it a spicy kick)

Pan fry the onions until translucent, add vegetables (no potatoes yet). Let it roast until flavors are released (10 minutes or so), then add the canned tomatoes. Let it simmer for 15-20 minutes at low heat. Add salt, pepper and spices. Then, add the potatoes already cooked, stir and sprinkle with parsley.
