An energy-filled and nutrient-loaded alternative that brings home the taste of traditional pecan pie.
Preparation time: 15 minutes
2 cups pecans (smooth it in the food processor)
2 cups of dates (pitted)
1 1/2 cup coconut flakes
1 teaspoon of agave syrup
1/2 teaspoon salt
1 teaspoon cinnamon
* optional:chopped and toasted pecans or powdered sugar for decoration
In a food processor, process dates until they become smooth and add the pecan butter, coconut, agave syrup, coconut salt and cinnamon.Process until well mixed then place the mixture into a bowl and “knead” until well mixed. Roll into your hands balls aprox. 1″ diameter. You will get about 25 balls. Roll into toasted pecans for extra crunch and store in the fridge. If you want more sweetness, roll the balls in powdered sugar before you serve. sugar will become moist melt if kept in the fridge.
